Soft Dough Yeast Pretzels by Mom (Pam Hopkins)

Ingredients

• 4 1/2 c. Flour
• 1 package dry yeast
• 1 1/4 c. Very warm water
• 2 tbsp. Course Salt

• Dipping Solution:
• 4 Tbsp. Baking soda
• 1 quart water

Notes

We made these in 7th grade home economics class.

Directions

• Pour very warm water in a small bowl. Sprinkle yeast over water. Stir until completely dissolved.
• Put flour in a large bowl. Pour in dissolved yeast. Stir well with a wooden spoon.
• Turn out on to a floured surface. Knead dough for 5 minutes until smooth and elastic.
• Form into sticks. Roll between palms to form 12" strand, 1/4" in diameter. Shape these into pretzel shapes. Dampen spots where dough overlaps with warm water.
• Prepare dipping solution in a large saucepan. Bring to boil over high heat.
• Place 2-3 pretzels at a time in the boiling dipping solution. Remove when they come to the top of the water. Drain well.
• Place on a baking tray lined with foil. Sprinkle with coarse salt while they are moist. Bake at 400 for 15 minutes until brown.
