Rosemary Roasted Chicken with Potatoes by Mom (Pam Hopkins)

Ingredients

• 2 tsp. paprika
• 1 1/2 tsp. rosemary leaves
• 1 tsp. minced garlic
• 1/2 tsp. ground black pepper
• 2 Tbsp. olive oil
• 1 tsp. salt
• 6 bone-in chicken thighs, skin removed
• 1 1/2 lbs. red potatoes, cut into cubes

Yields

6 servings

Directions

• Mix spices, oil and salt in a large bowl.
• Add chicken and potatoes; toss to coat well.
• Arrange chicken and potatoes in single layer on large baking pan sprayed with cooking spray.
• Roast at 425 for 30 minutes or until chicken is cooked through and potatoes are tender.
• Turn potatoes halfway through cooking.
