Roasted Potatoes by Nanny (Sandy Downey, Uncle Bryant's mom)

Ingredients

• 1 envelope onion soup mix
• 2 pounds potatoes, cut into large chunks
• 1/3 cup olive oil

Yields

8 servings

Directions

• Preheat oven to 450 degrees.
• In large bowl, combine all ingredients and toss to coat.
• Pour potatoes in a shallow baking dish.
• Bake 40 minutes, stirring occasionally, until tender and brown.
