Pumpkin Bread by Mom (Pam Hopkins)

Ingredients

• 3 eggs
• 2 1/4 c. sugar
• 1 1/2 c. canned pumpkin (one whole can)
• 3/4 c. vegetable oil
• 3 oz. water
• 2 1/4 c. flour
• 1/4+1/8 tsp. baking powder
• 1 1/2 tsp. baking soda
• 1 1/8 tsp. salt
• 3/4 tsp. cloves
• 3/4 tsp. cinnamon
• 1/4+1/8 tsp. ginger
• 1/4+1/8 tsp. nutmeg

I got this recipe from our neighbor, Toni Ange.

Yields

5-6 mini loaves

Directions

• Beat together eggs and sugar.
• Add pumpkin, oil, and water. Blend well.
• Add remaining ingredients. Blend well.
• Pour into 5-6 greased mini loaf pans.
• Bake at 350 for 35-40 minutes.
