Pasta E Fagioli Soup by Aunt Kim (Downey)

Ingredients

• 1 pound Italian sausage (can be hot if you like spicy)
• ½ medium onion
• ½ cup sliced carrots
• 3 stalks celery, diced
• 2 cloves garlic
• 1 30 oz can petite diced tomatoes
• 1 15 oz. can kidney beans
• 1 15 oz. can great northern beans
• 1 15 oz. can tomato sauce
• 1 12 oz. can V-8 juice
• 1 tablespoon white vinegar
• 1 ½ teaspoon salt
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• ½ teaspoon black pepper
• ½ teaspoon dried thyme
• ¼ cup ditali pasta

Directions

• Brown the Italian sausage in a large pot over medium heat. Drain off most of the fat.
• Add onion, carrot, celery and garlic and sauté until soft.
• Add remaining ingredients and simmer for 1 hour (if it seems thick, add some water).
• About 50 minutes into the simmering, cook the pasta in 2 quarts boiling water over high heat until al dente. Drain.
• Add the pasta to the large pot of soup. Simmer for 5-10 minutes more and serve.
