Jambalaya by Aunt Karen and Uncle Jon (Dean)

Ingredients

• 1 quart rice (raw)
• 1 lb. mushrooms
• 3 smoked chicken halves
• 10 oz. ham, diced
• 10 oz. Cajun sausage, diced
• 8 oz. shrimp
• 1/2 lb. butter
• 1 quart onions, diced
• 2 c. celery, diced
• 1 c. bell peppers, diced
• 1 whole red pepper, diced
• 1 c. green onion whites, diced
• 1 c. green onion greens, diced
• 1 Tbsp. garlic, minced
• 2 Tbsp. chicken base
• 2 bay leaves
• 1/2 Tbsp. thyme
• 2 Tbsp. Cajun spice
• 1 tsp. black pepper, ground
• 2 Tbsp. kosher salt
• 28 oz. crushed tomato
• 6 oz. tomato paste
• 5 c. water
• 1 c. parsley, fresh, chopped
• 1/2 c. brown flour

Directions

• Melt butter in a large pot.
• Cook mushrooms, onions, celery, bell pepper, red pepper, green onions (whites) and garlic 5-7 minutes.
• Add flour and stir well.
• Add rice, chicken, ham, sausage, shrimp, seasonings, tomatoes, tomato paste and water. If using small shrimp, add the last 20 minutes of cooking.
• Cook 50 minutes covered over low heat until rice is done.
• Garnish with parsley and green onion greens.
