Chicken and Noodles by Grandma (Karen) Oller

Ingredients

• Whole chicken, 4+ pounds
• 8 cups water
• 6 chicken bullion cubes
• 3 cups carrots
• 3 cups celery, diced
• 2 medium onions, cut into 1/2 inch slices
• 1 tsp. Garlic powder
• 1 tsp. Black pepper
• 1 tsp. Parsley flakes
• 1/2 lb. pasta (noodles, macaroni, etc.)
• Chopped green onion or chives (optional)

Notes

If you plan to freeze part of the recipe, do so before you add the pasta.

Directions

• Remove giblets from cavity and rinse in cold water. (Disinfect sink when done.)
• Place first 9 ingredients in Dutch oven or large pot.
• Cover and bring to a boil.
• Reduce heat and allow to simmer at least 1 hour.
• Remove chicken. Allow to cool so skin and bones may be removed.
• Remove vegetables with slotted spoon.
• Bring broth back to a boil and add 1/2 pound pasta (noodles, macaroni, etc.)
• Cook pasta according to package directions.
• When done, add deboned chicken and vegetables.
• Serve in bowls.
• Top with chopped green onion or chive for garnish.
