Asian Soup by Mom (Pam Hopkins)

Ingredients

• 2 teaspoons peanut or canola oil
• 6-8 green onion, sliced thinly (whites and greens divided)
• 3 cloves minced fresh garlic
• 2 carrots, thinly sliced
• 1 cup sugar snap peas, sliced (optional)
• pinch of hot pepper flakes to taste
• 1 bunch Asian greens, chopped
• 2 cups mushrooms, thinly sliced
• 8 cups, broth
• 2 cups leftover cooked steak or other meat, thinly sliced
• 3 tablespoons, soy sauce
• Asian hot chili sauce (optional)

Yields

6-8 servings

Directions

• In a soup pot, heat oil over medium heat. Cook onions (whites), garlic, carrots, sugar snap peas and hot pepper flakes for 1 minutes to soften.
• Stir in greens and mushrooms. Cook another minute or two.
• Pour in broth; bring to a boil.
• Reduce heat and simmer for 5 minutes or until vegetables are tender crisp.
• Add meat, soy sauce and chili sauce if serving.
• Cook for 5 minutes before serving.
• Top with green onions before serving.
